Plus, it's a question we got a lot during our months backpacking through Thailand, Malaysia, Laos, Cambodia, Vietnam, the Philippines and Indonesia.

Vietnam is a very long country with mountainous regions, so it presents a climatic diversity that varies considerably from north to south.

The dry season in Laos runs from November to March. During these months, the weather is cooler and rain is less likely to disrupt your travel plans. On the other hand, everything tends to be quite dry and the landscapes lose a bit of their charm, especially in the North, which is known for being green, or in places like Pakse the waterfalls carry very little water.
So especially in the mountainous areas in the north, I think it's a good idea to take a bit of a gamble and go during the rainy season. Plus, that's when the rice fields are at their greenest.

Indonesia, with its thousands of islands, has a climate that can vary greatly, but in general, the dry season from May to October is ideal for most places, including Java and Bali. It's also the best time to travel to Southeast Asia and explore less touristy but spectacular places like Borneo or Sulawesi.
A peculiarity is that places like the Togean Islands in Sulawesi or Raja Ampat are very close to the equator line, which makes the climate fairly stable all year round, making them good destinations to travel to in any month.
As I said, May through October are months of warm, sunny weather, perfect for enjoying the beaches, exploring temples, and immersing yourself in the local culture without worrying about the rain. However, you'll find browner landscapes in places like Komodo or Kuta in Lombok, although they are still spectacular, they do not look as much like greens.

The Philippines is one of the most complex countries, with more than 7.000 islands, the climate varies depending on the region, and it also has a very tropical climate. This makes any time of year a good time to travel to the Philippines.
